Christmas Recipes - Candy Cane Cookies


Candy Cane Cookies

1 c butter
1 1/4 c powdered sugar (place 1/4 c in a small bowel)
1 1/2 tsp vanilla
1 1/3 c white flour
1 c rolled oats
1/2 tsp salt
3/4 c crushed peppermints (crush candy canes on sheet of wax paper with a rolling pin)

Preheat oven to 325 degrees.

Mix butter, powdered sugar (icing sugar) until creamy and then add vanilla and mix.

In a separate bowl mix flour, oats, and salt and then mix together. Add 1/2 the crushed candy canes to the cookie mixture until well mixed.

Roll into 1" balls and roll into a small bowl of powdered sugar and place a few inches apart on greased baking cookie sheets.

Flatten the cookies with a fork and then sprinkle left over crushed candy canes on them.

Bake for 18 to 20 min until the cookies are lightly brown.

Makes 48 delicious cookies which will disappear quickly.
