Halloween Dinner Recipe - Dinner in a Pumpkin


Ingredients:


1 medium to large pumpkin


2c instant white rice


2 cans of cream of mushroom soup


1/2 cup diced onions


1 cup diced green peppers


1 1/2 lbs cooked hamburger


2 cans of water (use cream of mushroom soup can)



salt and pepper





Method:



1. Brown hamburger and then add the celery, green peppers, onion and cook until vegetables are slightly soft.

2. Take your pumpkin and cut the top off like you do when you prepare the pumpkin for carving. Open it up and take out all the seeds and strings. Set it aside until the food is cooked.

3. Add cream of mushroom soup, water and let simmer a few min.

4. Add instant white rice and stir it well.

5. Put your pumpkin on a cookie sheet, pizza pan, cake pan or pie plate for any food that overflows while cooking. You will also serve the meal in a pumpkin on this as it's easier to.

6. Scoop all the hamburger mixture and place into the pumpkin and then put the pumpkin lid on it.

7. I always drew a pumpkin face on the pumpkin with a black magic marker before I cook it as it's too soft and shrinks in the cooking.

8. Set the pumpkin mixture in a preheated oven at 350 degrees and bake 1 1/2 to 2 hours. Check he pumpkin inside with a fork to see if the pumpkin is tender enough and when it's soft it's done.


Leave the pumpkin on the cookie sheet to serve as it's too soft. Scoop some of the tender pumpkin as well with the hamburger meal to eat. This was one of my families yearly favourite treats.


I also would empty a second pumpkin the same way and use it to serve my beverage with the meal. I would put apple juice and cinnamon sticks with ice in it and serve with a punch bowl server. It was a pumpkin, apple juice drink which my family loved.
